TASTING NOTES

This Pinot Noir is a true expression of the varietal grown on the coastal areas of Sonoma County with complex aromas of raspberries, spiced cherries, wild strawberries and subtle vanilla bean notes. On the palate, the wine has great acidity with a smooth texture and long finish. Enjoy for everyday occasions.

FOOD PAIRING

Cheese with slightly sweet, nutty flavors and smooth texture served with pork-based charcuterie.

Anchovies, herring, mackerel, mullet fish or grilled salmon with a mild butter sauce.

Lamb or pork chops with grilled vegetables.

Pasta with light tomato sauce made with wine, broth or a touch of cream.

A classic beef Bourguignon or lightly marinated beef tenderloin or filet mignon.

S T O R Y    O F    T H E    W I N E

Our Pinot Noir grapes are grown near the Pacific Ocean along the Sonoma Coast. Fruit is harvested at night and immediately sorted at the winery. Following a short cold soak, the juice is fermented in stainless steel, open-top tanks. When fermentation is complete, the wine is drained from the tank and the skins are gently pressed. The resulting wine is aged in both neutral barrels and new barrels for 11 months.
